Biography
Cannelloni with ricotta, shrimp and leeks (45 min, 4 servings):
this unusual version of cannelloni paris a chive-flecked ricotta filling with an intensely flavored topping of leeks and shrimp that are sauteed in olive oil, then flambeed with armagnac. the sheets of pasta dough are rolled so thin, u can pratically see through them.
what needed:
1 fresh ricotta (wtf is a pound???)
1 tablespoon minced chives
salt and freshy ground pepper
2 1/2 tablespoon freshly grated
parmigiano cheese
1/4 pound (why i keep translating grams->pounds?)
thin sheets of fresh pasta
2tablespoons extra-virgin olive oil
2 medium leeks, white and tender green parts only, sliced crosswise 1/3 inch thick
8 large shrimp-shelled, halved lenghtwise and deveined
1 tablespoon armagnac or other brandy stuff like that

1.preheat the oven to 350°.in a small bowl blend the ricotta with the chives and season with salt and pepper. Spread 1 tablespoon of butter in a 9x13inch backing dish. sprinkle the parmigiano over the bottom of it.
2.bring a medium saucepan of salted water to boil. have ready a large bowl of cold water. cut the pasta sheets into eight 6inch squares. add them to the boiling water and cook em for about 2 mins. using a slotted spoon transwer the sheets to the bowl of cold water and let cool. spread the sheets on paper towels and let them dry.
3.transfer pasta sheets to a work surface. spread 1/4 cup of ricotta filling at one edge of each pasta sheet and roll up loosely to make flattened cylinders. transfer the cannelloni to the prepared baking dish and spread 1/2 tablespoon of butter over em. bake cannelloni for about 12mins.
4.so, in amedium skillet, heat the olive oil. add the leeks, season with salt and pepper and cook over moderately low heat, stirring when needed, till softened, for about 8 mins. increase the heat to moderate. add the shrimp, season with salt and pepper, stirring ecc ecc for like 3 mins.
add armagnac and carefully light it with a long-handed match. when flames die down, swirl in the remaining 1 tablespoon of butter. spoon the leeks and shrimp over the baked cannelloni and enjoy! (preferibly with a freash vermentino wine)

Threat Assessment
This team mostly consists of new players or at least people i've never seen before. It could be civil who've after seven years learned how to communicate in fluent Italian so they could be the ultimate theme team. Or it could be just some dudes who all bought Myth after they got really hammered on wine. I'm bettin' it's civil.

DE1: Well they lost against TFS and were sent into the bottom bracket. They will probably face age, let's see how that goes (if they show up).
DE3 Update : well they forefitted thier last match. This was the first year for this italian team, hopefully they learned some new tricks and will play next year!This team has received 11 betting pool "votes".
